Vegan Savoury Collagen Muffins


1 grated zucchini

1 grated carrot

1/2 onion, diced

100g chopped tomato

2 cups flour of choice

1 tsp baking powder

1/4 tsp salt

1/4 olive oil

1 1/2 cups water

1 tsp vegetable stock powder

1 tsp paprika

2 tbsp chopped chives

4 tbsp collagen (unflavoured)


  1. Preheat the oven to 180 degrees and grease muffin tray
  2. In a large bowl combine all ingredients (except chives)
  3. Evenly distribute mixture into muffin tray
  4. Cook in oven for 25 minutes or until golden
  5. Let cool and top with fresh chives
