Ingredients:
1 grated zucchini
1 grated carrot
1/2 onion, diced
100g chopped tomato
2 cups flour of choice
1 tsp baking powder
1/4 tsp salt
1/4 olive oil
1 1/2 cups water
1 tsp vegetable stock powder
1 tsp paprika
2 tbsp chopped chives
4 tbsp collagen (unflavoured)
Method:
- Preheat the oven to 180 degrees and grease muffin tray
- In a large bowl combine all ingredients (except chives)
- Evenly distribute mixture into muffin tray
- Cook in oven for 25 minutes or until golden
- Let cool and top with fresh chives
