Blueberry Collagen Muffins


1 ½ cup of flour

3/4 cup of sugar

2 tbsp of Kiwi Nutrition Collagen Powder

2 tsp of baking powder

1/3 cup of oil or butter

1 large egg

1/2 cup of milk

1 tsp vanilla extract

1 cup of fresh or frozen blueberries



1) Preheat the oven to 200°C

2) Line around 10 standard muffin cups

3) Whisk the flour, sugar and baking powder in a large bowl

3) Add the oil, egg, milk and vanilla extract

4) Add the two mixtures together and use a fork to combine but don't over mix. Fold in the blueberries

5) Divide batter between muffin cups

6) Bake muffins for 15-20 mins or until knife comes out clean

7) Transfer to a cooling rack
